Spicy Fish with Cucumber and Tomato Salsa
- 1-1/2 lb. (675 g) rainbow trout fillets
- 1/3 cup Kraft Creamy Cucumber Dressing
- 1 tsp. garam masala
- 1 tsp. ground cumin
- 1/2 tsp. red chili powder or cayenne pepper
- 1/2 cup finely chopped tomatoes Safeway 1 lb For $1.29 thru 02/09
- 1/4 cup finely chopped red onions
- 1/4 cup finely chopped peeled English cucumbers
- 2 Tbsp. chopped fresh coriander (cilantro)
- 2 Tbsp. fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
- Heat oven to 400 degrees F.
- Place fish in single layer in parchment-lined pan.
- Mix next 4 ingredients.
- Reserve 2 Tbsp.
- dressing mixture; brush remaining onto fish.
- Bake 15 min.
- or until fish flakes easily with fork.
- Meanwhile, combine reserved dressing mixture and remaining ingredients.
- Serve fish topped with vegetable mixture.
