Cajun Shrimp & Chorizo Pasta

  1. For the Cajun seasoning: Place ingredients in a bowl and whisk to combine.
  2. Store in an airtight container.
  3. For the Cajun shrimp and chorizo pasta: In a large skillet, cook chorizo over medium high heat, breaking it up as it cooks.
  4. Remove from the skillet once cooked through.
  5. This should only take a couple of minutes.
  6. Lower the heat to medium and melt butter together with the olive oil.
  7. Stir in peppers, mushrooms, onion, and 1 tablespoon of the Cajun seasoning.
  8. Cook until soft, about 5 minutes.
  9. Stir in garlic and cook for 30 seconds.
  10. Stir in shrimp and cook until firm and pink, about 3 5 minutes.
  11. Add half-and-half, Parmesan cheese, and chorizo.
  12. Bring to a simmer, to thicken.
  13. Simmer for about 10 minutes.
  14. Season with another 1 tablespoon of Cajun seasoning and salt, to taste.
  15. Toss with pasta and serve.
  16. We loved the leftovers.
