Stuffed Moroccan Mushrooms
- 300g chicken mince Whole Foods 1 lb For $3.99 thru 02/09
- 8 spring onions, thinly sliced
- 1/4 cup KRAFT Smooth Peanut Butter
- 1/2 cup chopped apricots
- 1/4 cup toasted pistachio nuts, chopped
- 3 teaspoons moroccan seasoning
- 1/2 teaspoon crushed garlic
- 1/2 cup light sour cream
- 8 field mushrooms
- Combine mince, spring onions, peanut butter, apricots, pistachio, moroccan seasoning, garlic and light sour cream.
- Divide mixture among the mushrooms, pressing mince gently, but firmly into the cavity.
- Bake at 180C for 20-30 minutes until mince is cooked through.
- Serve immediately.
