Stuffed Moroccan Mushrooms

  1. Combine mince, spring onions, peanut butter, apricots, pistachio, moroccan seasoning, garlic and light sour cream.
  2. Divide mixture among the mushrooms, pressing mince gently, but firmly into the cavity.
  3. Bake at 180C for 20-30 minutes until mince is cooked through.
  4. Serve immediately.
