Blackened Salmon Hushpuppies
- 4 eggs
- 2 cups onion, grated
- 1 1/3 tablespoons lemon juice
- 1 1/2 teaspoons black pepper
- 4 tablespoons parsley chopped
- 1/2 cup milk
- 1 1/2 teaspoons salt
- 1 1/2 cups jalapenos, chopped
- 8 cups rice, cooked
- 3 pieces blackened salmon
- Flour, for coating
- 6 eggs beaten
- Bread crumbs
- Oil, for deep frying
- Beat 4 eggs, add all ingredients except salmon.
- Flake salmon with fork and mix into rice mixture.
- Let stand for at least 30 minutes.
- Using an ice cream scoop, form into balls and dip in flour, dip in egg, dip into bread crumbs and let stand for 30 minutes before cooking.
- Heat oil to 350 degrees.
- Fry the hushpuppies until golden brown.
