  1. Heat oil in large skillet on medium-high heat.
  2. Add next 4 ingredients; cook and stir 5 min.
  3. or until onions are crisp-tender and lightly browned.
  4. Add coconut milk, water, tomatoes, nuts and seasonings; stir.
  5. Cook 5 min.
  6. or until thickened, stirring frequently.
  7. Stir in shrimp; cook 8 min.
  8. or until shrimp are tender, stirring frequently.
  9. Stir in coriander and lemon juice.
