Herb and Ranch Roasted Fingerling Potatoes
- 10 fingerling potatoes.
- 4 tbsp Hidden Valley powdered ranch dip seasonings
- 1/2 tsp granulated garlic
- 1 tsp parsley flakes
- 1 tsp thyme leaves
- 6 tbsp olive oil
- Preheat oven to 425 degrees .
- Wash and cut fingerling potatoes in half or quarter larger ones.
- Mix all herbs, ranch powder and the 6 tablespoons of oil into a bowl.
- Add potatoes and coat well.
- Spread coated potatoes evenly onto an ungreased baking sheet.
- Spoon excess herb oil over potatoes.
- Bake/Roast potatoes for 25 minutes or until potatoes are fork tender.
- Add a dash of salt and pepper to taste when you take them out of the oven to cool.
- Enjoy!
