Strawberry Surprise Cake

  1. Preheat oven to 350 degrees.
  2. Grease (don't flour) a 9x13 pan.
  3. In a small bowl, combine the gelatin and the strawberries, with their liquid.
  4. Set aside.
  5. Sprinkle the marshmallows evenly across the bottom of the prepared pan.
  6. Sift together the flour, baking powder and salt.
  7. In a large bowl, use a mixer to beat the sugar and butter, until the mixture is light and fluffy.
  8. Beat in the eggs, one at a time.
  9. Beat in the vanilla.
  10. Beat in the flour mixture, in thirds, alternating with the milk.
  11. Make sure to beat well and scrape the bowl between additions.
  12. Pour the mixture over the marshmallows, gently spreading it edge to edge.
  13. Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.
  14. Cool.
  15. Top with whipped cream and fresh strawberries.
