Mini Peanut Butter Cheesecakes

  1. Heat oven to 325 degrees F.
  2. Mix cookie crumbs and butter; press onto bottom of 8-inch square pan.
  3. Beat Neufchatel, peanut butter and sugar with mixer until blended.
  4. Add egg; mix just until blended.
  5. Spoon over crust.
  6. Bake 18 to 20 min.
  7. or until center is almost set; cool.
  8. Drizzle chocolate over cheesecake.
  9. Refrigerate 5 min.
  10. before cutting to serve.
