Curry Couscous made with BOCA
- 1-1/2 qt. water
- 1-1/2 qt. couscous, uncooked
- 1/3 cup oil
- 1-1/2 qt. zucchini, cut lengthwise into quarters, thinly sliced
- 3 cups red onions, finely chopped
- 3 cups carrots, peeled, shredded
- 3 qt. frozen BOCA Ground Burger, separated
- 2 qt. canned chickpeas (garbanzo beans), drained, rinsed
- 2 cups California raisins
- 1 Tbsp. ground cumin
- 1 Tbsp. curry powder
- Bring water to boil in large saucepan.
- Add couscous; stir.
- Remove from heat; cover.
- Let stand 5 minutes.
- Heat oil in large skillet.
- Add zucchini, onions and carrots; saute 3 to 4 minutes or until crisp-tender.
- Add all remaining ingredients except couscous.
- Cook 8 to 10 minutes or until heated through, stirring occasionally.
- Add couscous; stir gently until well blended.
