Curried Chicken and Summer Fruit Salad
- 1 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon curry powder
- 1 teaspoon soy sauce
- 14 teaspoon salt
- 14 teaspoon pepper
- 2 cups cooked chicken, cubed
- 8 ounces water chestnuts, drained and quartered
- 1 12 cups red seedless grapes, halved (1/2 lb)
- 1 cup honeydew melon, cubed (1/2 lb)
- 1 cup cantaloupe, cubed (1/2 lb)
- 6 lettuce leaves
- 12 cup almonds, sliced and toasted
- Combine the dressing ingredients and mix well.
- Add salad ingredients minus the lettuce leaves and almonds, toss to coat.
- To serve, place one lettuce leaf on each of 6 serving plates, top with salad, garnish with almonds.
