Quick Strawberry Bread
- 3 cups flour, all-purpose
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 3 ounces gelatin, unflavored strawberry flavored
- 3/4 cups liquid egg substitute
- 2 cups strawberries frozen, thaw, reserving 3 tb juice
- 1 each bananas sliced
- 3/4 cups vegetable oil
- Preheat oven to 375F (190C).
- In large bowl, combine flour, sugar, baking soda, cinnamon, nutmeg and gelatin.
- Stir until evenly mixed.
- Make a well in center of dry ingredients.
- In food processor or blender, combine egg substitute, undrained strawberries, sliced banana and oil.
- Blend until smoth and creamy.
- Pour fruit mixture into well and stir gently by hand until dry ingredients are moistened.
- Using non-stick cooking spray, grease two 9x5 inch loaf pans.
- Pour batter equally between pans.
- Bake on center rack of oven 45 to 50 minutes or until inserted toothpick comes out clean.
- Let cool before slicing.
- Makes 2 loaves.
