Pineapple Butterscotch Squares
- 2 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. margarine
- 1 c. brown sugar
- 1/2 c. granulated sugar
- 1 (20 oz.) can Dole crushed pineapple, well drained
- 2 eggs
- 1 tsp. vanilla
- 1 c. (6 oz.) butterscotch chips
- 1 c. chopped pecans, toasted
- vegetable cooking spray
- powdered sugar (garnish)
- Combine flour, baking powder and salt in small bowl; set aside. Beat together margarine, brown sugar and granulated sugar in large bowl until creamy. Add pineapple, eggs and vanilla; beat until blended. Stir in flour mixture, butterscotch and nuts until blended. Pour in 13 x 9-inch baking pan sprayed with vegetable cooking spray. Bake at 350u0b0 for 40 to 45 minutes or until toothpick inserted in center comes out clean.
