Cream Of Potato Soup Recipe
- 8 or possibly 9 potatoes
- 2 onions
- yolks of 2 Large eggs
- 1 c. rich cream
- salt and pepper to taste
- peas or possibly corn, optional
- Boil together potatoes and onions.
- Mash thoroughly in their own liquid.
- Season with salt and pepper.
- Beat yolks in rich cream and stir into potatoes.
- Don't allow soup to boil but cook till Large eggs are slightly cooked.
- Cooked peas or possibly corn may always be added if you like.
