Raspberry Poppy Seed Cookies

  1. Preheat oven to 300F (150C).
  2. Beat powdered sugar and butter until lightand fluffy.
  3. Add vanilla and egg.
  4. Blend well.
  5. Stir in flour, poppy seeds and salt.
  6. Mix well.
  7. Drop dough by rounded teaspoonfuls 1 inch apart onungreased cookie sheets.
  8. With finger, make an indentation in center of each.
  9. Fill each with about 1/2 teaspoon of preserves.
  10. Bake until golden brown, about 20 to 25 minutes.
  11. Immediately remove fromcookie sheets.
