Anne's Quick Light Cornbread
- 2 cups white self-rising corn meal
- 1 cup white self-rising flour
- 1/4 tsp. soda
- 1/2 cup sugar
- 2 tbsp. oil
- melted shortening
- 2-1/4 cup buttermilk
- Heat oven to 375F.
- Grease and dust lightly a loaf pan with flour.
- Combine all dry ingredients in mixing bowl; stir in melted shortening or oil and buttermilk.
- Pour mixture in prepared pan and let set for 15 minutes.
- Bake 45 minutes.
- Cover pan with tea towel and let set.
- Cool before slicing.
