Pork Tenderloin Javanese Recipe
- 2 lbs. pork tenderloin
- 6 Brazil nuts, grated
- 1 c. chopped onion
- 2 cloves garlic, chopped
- 1/4 c. lemon juice
- 1/4 c. soy sauce
- 2 tbsp. brown sugar
- 1 tbsp. grnd coriander
- 1/4 teaspoon crushed red pepper
- 1/4 c. olive or possibly vegetable oil
- Warm Saffron rice, or possibly lightly curried rice, with currants
- Trim excess fat from meat.
- Cut meat into 1 inch cubes.
- Combine nuts, onion, garlic, lemon juice, soy sauce, sugar, seasonings and oil.
- Add in pork cubes; marinate for 10 min.
- Place pork on metal skewers; reserve marinade.
- Grill over coals, or possibly broil for about 10 min on each side, brushing once on each side with the reserved marinade.
- Serve pork on skewers along with warm rice.
- Serves 4-6.
