Apple Pie Smoothie

  1. Preheat oven to 400 degrees F. Line a small baking sheet with parchment paper.
  2. In a small bowl, whisk together brown sugar and spices with a fork.
  3. Add apple slices and toss to coat.
  4. Spread apples onto prepared baking sheet.
  5. Place oats on a separate small baking sheet.
  6. Place both baking sheets in the oven.
  7. Remove the oats after 5 minutes.
  8. Allow the apples to bake for another 5 minutes (10 minutes total).
  9. Cool oats and apples for about ten minutes.
  10. In a blender, pulse the oats until finely ground.
  11. Add the roasted apples, apple juice, and vanilla extract to the blender and blend until smooth.
  12. Pour into a glass and serve immediately or chill for later.
