Duck Montmorency Recipe

  1. Rub ducks with salt, pepper and rosemary.
  2. Heat oil in a large baking dish and brown ducks.
  3. Brush with honey and bake in a moderate oven for 30 min at 350 degrees, basting frequently.
  4. Place giblets, onions, water, bay leaves and peppercorns in a saucepan and cook till reduced by half.
  5. Add in the cherry juice and reduce further to 1 pint.
  6. Strain and thicken with the arrowroot blended with water.
  7. cut ducks into serving portions and place in a casserole with the sauce.
  8. Cover and bake at 350 degrees for 2 1/2 hrs.
  9. Add in liquid removed cherries just before serving.
  10. Serve accompanied by parisienne potatoes and minted peas.
