Veggie Tilapia Skillet
- 2 Tablespoons Olive Oil
- 1 whole Small Onion, Sliced
- 2 whole Garlic Cloves, Peeled And Minced
- 2 whole Tilapia Fillets
- 4 whole Celery Stalks, Chopped
- 1/2 cups Canned Black Beans, Rinsed
- 1/2 cups Canned Whole Kernel Corn, Rinsed
- 1 Tablespoon Cumin
- 1 teaspoon Red Pepper
- 2 Tablespoons Lemon Juice
- 1.
- Heat oil in skillet over medium heat.
- Add onions and garlic, then cook until aromatic and onion is almost translucent.
- 2.
- Remove onions/garlic and set aside, then add tilapia to the skillet.
- Cook until no longer pink.
- Remove and set aside with onions.
- 3.
- Combine celery, onions, corn and black beans into skillet.
- Cook until hot and season according to taste.
- 4.
- Break up the tilapia into chunks, then add to the mixture with lemon juice.
- Stir until everythings hot and serve.
