Veggie Tilapia Skillet

  2. Heat oil in skillet over medium heat.
  3. Add onions and garlic, then cook until aromatic and onion is almost translucent.

  5. Remove onions/garlic and set aside, then add tilapia to the skillet.
  6. Cook until no longer pink.
  7. Remove and set aside with onions.
  8. 3.
  9. Combine celery, onions, corn and black beans into skillet.
  10. Cook until hot and season according to taste.
  11. 4.
  12. Break up the tilapia into chunks, then add to the mixture with lemon juice.
  13. Stir until everythings hot and serve.
