Sparkling Strawberry Daiquiri Ice

  1. Stir boiling water into dry gelatin mix in medium bowl at least 2 min.
  2. until completely dissolved.
  3. Add carbonated beverage, lemon peel and juice; stir until well blended.
  4. Pour into 9-inch square pan; cover.
  5. Freeze 3 hours or until firm.
  6. Remove from freezer; let stand 10 min.
  7. at room temperature.
  8. Spoon into medium bowl.
  9. Beat with electric mixer on high speed until smooth.
  10. Spoon evenly into 6 dessert dishes.
  11. Store leftover desserts in freezer.
