Chicken Divan
- 5 whole chicken breasts
- 3 (10 oz.) boxes frozen broccoli spears
- 3 cans cream of chicken soup
- 1 1/2 c. mayonnaise
- 1 1/2 tsp. lemon juice
- 1/2 tsp. curry
- 3/4 c. grated Cheddar cheese
- buttered crumbs
- Steam or poach chicken breasts until they are barely done. When well chilled, slice thinly.
- Cook broccoli tender-crisp. Arrange broccoli evenly over bottom of greased 9 x 13-inch baking dish.
- Distribute chicken slices evenly over the broccoli. Combine soup, mayonnaise, lemon juice, curry and most of the Cheddar cheese and pour over broccoli and chicken.
- Add the rest of the cheese to the cooled buttered crumbs and sprinkle over the casserole.
- Bake in moderate oven (350u0b0) at least 45 minutes until the casserole is bubbly and heated through.
