Peppered Zucchini
- 3 each Zucchini
- 1/2 stick Butter
- 1 tbsp Pepper
- 1 Salt
- 1 Parmesan
- Shave zucchini on a mandolin, then julienne.
- Melt butter in a sauce pot.
- Crush pepper in a mortar.
- When butter begins to bubble, add pepper.
- Toast pepper until you can smell it, then add julienne zucchini.
- Cook over medium, stirring often, until zucchini become translucent.
- Serve, and garnish with grated Parmesan.
