Onion and Orange Salad (With Evoo)
- 4 oranges
- 1 red onion, cut in paper-thin slices
- 1 teaspoon oregano, fresh or 13 teaspoon oregano, dried
- 1 pinch salt
- fresh ground pepper, to taste
- 14 cup extra virgin olive oil
- Peel the oranges removing all the white membrane.
- Cut crosswise into thin slices and discard any seeds.
- Arrange the orange slices on a large serving dish.
- Separate onion slices into rings and scatter over the oranges.
- Sprinkle on oregano, season with salt and pepper and then drizzle the oil over all.
- Refrigerate until ready to serve.
