Cheesy Taco Taters
- 5 Baking potatoes, peeled & cut into medium sized chunks. (I leave the skin on mine)
- 1/3 cup Olive or vegetable oil
- 1 packages Taco seasoning
- 1 Sprinkle of seasoned salt
- 1 Sprinkle of black pepper
- 2 cup Shredded cheese of choice. (Original recipe uses Monterrey Jack/Cheddar blend)
- Place potatoes in a gallon size ziploc bag with oil and taco seasoning.
- Seal & shake until everything is well coated.
- Spray a 9"x13" dish (or any dish big enough to spread them out in) with non stick cooking spray and spread the potatoes out in it.
- Sprinkle with a little seasoned salt and black pepper.
- Place in a 400F oven for 40 minutes.
- At 20 minutes, stir them around to turn and get browned on all sides.
- Sprinkle with cheese about 10 minutes before the end of cooking time.
