Cherry Chicken
- 1 (12 ounce) jar cherry preserves
- 2 tablespoons lemon juice
- 4 whole cloves
- 14 teaspoon salt
- 14 teaspoon allspice
- 14 teaspoon mace
- 12 cup all-purpose flour
- 1 teaspoon salt
- 3 lbs chicken or 6 whole chicken breasts, split and boned
- Blend first 6 ingredients.
- Set aside.
- Combine flour and salt and coat chicken.
- Brown in oil in a skillet at medium heat, turning chicken.
- Cover and cook 15 minutes.
- Drain off fat.
- Add cherry sauce.
- Cover and simmer over low heat until tender.
- Turn chicken.
- Simmer 15 more minutes.
