Avocado Egg Toast

  1. Toast wheat bread and place on plates.
  2. Split avocado and remove pit.
  3. Spoon avocado into a bowl.
  4. Add lime juice, salt and pepper, to taste.
  5. Mash to combine flavors.
  6. Place 1/4 of the mashed avocado on each piece of toast.
  7. In a nonstick skillet over medium heat, spray olive oil cooking spray.
  8. Add each egg separately into pan and cook for about 23 minutes.
  9. Cover pan, let cook for approximately 1 more minute to compete cooking.
  10. Place 1 sunny side egg on each piece of toast and mashed avocado.
  11. Season with salt and pepper, to taste.
  12. Add Sriracha sauce if desired.
