Avocado Egg Toast
- 4 slices Whole Grain Wheat Bread
- 1 Avocado
- 2 teaspoons Lime Juice
- Salt And Pepper, to taste
- 4 Eggs
- Sriracha Sauce For Garnish (optional)
- Toast wheat bread and place on plates.
- Split avocado and remove pit.
- Spoon avocado into a bowl.
- Add lime juice, salt and pepper, to taste.
- Mash to combine flavors.
- Place 1/4 of the mashed avocado on each piece of toast.
- In a nonstick skillet over medium heat, spray olive oil cooking spray.
- Add each egg separately into pan and cook for about 23 minutes.
- Cover pan, let cook for approximately 1 more minute to compete cooking.
- Place 1 sunny side egg on each piece of toast and mashed avocado.
- Season with salt and pepper, to taste.
- Add Sriracha sauce if desired.
