Baked Cherry Custards
- 225 g madeira cake, cut into 1 cm cubes
- 12 cup cherry jam
- 2 cups milk
- 3 eggs
- 12 cup sugar
- Preheat oven to 180C.
- Divide chopped cake between 4 x 1 cup ovenproof ramekins.
- Top each with a heaped tablespoon of jam.
- Place milk in pot over low heat and heat till warm, about 5 minutes.
- Whisk eggs and sugar in a jug and gradually whisk in heated milk.
- Pour milk into ramekins and place these in a baking dish.
- Pour boiling water into baking dish, halway up sides of ramekins.
- Bake for 30 minutes till golden and set.
- Remove dish from oven and remove desserts from baking dish very carefully.
- cool 10 minutes and serve.
