Brown Sugar Meringue With Caramelised Banana Recipe
- 4 x Egg Whites
- 125 gm Granulated Sugar
- 125 gm Demerara Sugar
- 4 x Ripe Banana
- 2 Tbsp. Light Muscavado Sugar
- 75 ml Rum, (optional)
- 1.
- Preheat oven to 110 c / 225 f / Gas Mark 1/4.
- 2.
- Whisk egg whites till stiff, gradually add in the sugar - beating in between each addition.
- 3.
- Place baking parchment on baking sheet and spoon 12 meringues on and bake for 3 1/2 hrs.
- Remove and cold.
- 4.
- Slice bananas and place in a frying pan.
- Sprinkle over the sugar and the rum (optional) and cook till browned and tender - 3 to 5 min.
- 5.
- Serve with the meringues.
