Brown Sugar Meringue With Caramelised Banana Recipe

  2. Preheat oven to 110 c / 225 f / Gas Mark 1/4.

  4. Whisk egg whites till stiff, gradually add in the sugar - beating in between each addition.
  5. 3.
  6. Place baking parchment on baking sheet and spoon 12 meringues on and bake for 3 1/2 hrs.
  7. Remove and cold.
  8. 4.
  9. Slice bananas and place in a frying pan.
  10. Sprinkle over the sugar and the rum (optional) and cook till browned and tender - 3 to 5 min.
  11. 5.
  12. Serve with the meringues.
