Bone Suckin' Chicken Salad
- 1 tablespoon bone suckin' poultry seasoning
- 4 chicken breasts
- 1 tablespoon tarragon
- 1 granny smith apple, diced
- 12 cup pecan pieces or 12 cup sliced almonds, lightly toasted
- 1 cup celery, finely diced
- 12 cup pineapple juice
- 1 cup mayonnaise
- salt and pepper
- Slow cook the chicken breast in a crock pot with water just covering chicken breast.
- Add Bone Suckin' Poultry Rub to the water in the crock pot.
- (This step can be done the night before.
- ).
- When chicken is done, shred or cut up chicken and place in a large mixing bowl.
- Pour pineapple juice over the chicken and set aside while cutting up apples and celery.
- Add tarragon, apples, celery and nuts to chicken and mix well.
- Add mayonnaise to chicken salad and salt and pepper to taste.
- Serves 4-6.
