Tuscan Goat Cheese Spread

  1. Pre-heat oven to 350 degrees.
  2. Lightly coat small baking dish with olive oil.
  3. Drain tomatoes of most of the juice.
  4. In a small bowl combine tomatoes, tomato paste, balsamic vinegar and pesto.
  5. Place goat cheese in baking dish and top with tomato mixture.
  6. Bake until goat cheese ismelted and tomato mixture is bubbly.
  7. Sprinkle pine nuts over the top and drizzle lightly with olive oil.
  8. Enjoy!
