Low-Fat Guacamole Dip
- 1- 1/2 cup Cooked White Beans, Drained Very Well
- 2 cloves Garlic, Minced Or Crushed
- 1 teaspoon Onion Powder Or Granulated Onion
- 1 pinch Dried Oregano
- 1 pinch Sweet Paprika
- 1 whole Ripe Hass Avocado
- 2 Tablespoons Lemon Or Lime Juice
- 1/4 cups Diced Red Onion
- 1/2 teaspoons Salt, Or To Taste
- 1/2 cups Finely Diced Fresh Tomatoes
- 3 Tablespoons Finely Chopped Cilantro Or Parsley
- Drain beans well and place in food processor along with garlic and seasonings.
- Process until smooth.
- Peel avocado and remove pit.
- Add avocado and lime or lemon juice to beans.
- Process until smooth.
- Stir in diced onion.
- Add salt to taste.
- Transfer to a serving bowl and top with diced tomatoes and cilantro or parsley.
- Serve with tortillas or baked tortilla chips.
