Anchovy Relish Over Toast Recipe
- 1/2 can flat anchovies packed in oil (3-oz)
- 1/2 Tbsp. extra virgin olive oil
- 1/2 c. pitted Nicoise Kalamata or possibly other ripe olives
- 1 Tbsp. chopped chives
- 1 tsp small capers
- 1 tsp lemon juice Freshly grnd pepper
- 6 x thin slices French bread toasted, optional
- In food processor, combine anchovies, oil, olives, chives, capers, lemon juice and pepper to taste.
- Process till mix is finely chopped.
- Spread on toasted French bread.
- Makes 2 servings.
- Served with Braised Radicchio
