Beef Enchiladas

  1. Preheat oven to 220C
  2. Brown onions and green peppers in a little bit of olive oil, then put aside
  3. Season steak strips with bbq spice, salt and pepper
  4. Fry steak strips in olive oil until cooked medium, then set aside
  5. Open tortillas
  6. Divide the Mexican sauce in half.
  7. Now take one half and put equal amounts of Mexican sauce in each tortilla
  8. Followed with equal amounts of onions and green peppers in each tortilla, using all the onions and green peppers
  9. Do the same with the steak strips
  10. Divide the cheese in half.
  11. Take one half and put equal amounts of cheese in each tortilla
  12. Roll up the tortillas and place them in a greased oven dish
  13. Cover them with the remainder of the Mexican sauce followed by the remaining cheese
  14. Bake them for about 25 minutes or until light brown
  15. They go well with a Mexican side dish.
