Bean and Pancetta Salad
- 1 lb. (450 g) fresh green beans, trimmed, cut in half
- 3 slices pancetta, cut into strips
- 1 small onion, thinly sliced Safeway 1 lb For $1.49 thru 02/09
- 1/4 cup coarsely chopped pecans
- 1/4 cup Kraft 100% Parmesan Shaved Cheese
- 1/4 cup Kraft Extra Virgin Olive Oil Tuscan Italian Dressing
- Cook beans in pan of boiling water 3 to 5 min.
- or until crisp-tender; drain.
- Immediately plunge beans in bowl of ice water; drain well.
- Meanwhile, cook pancetta in nonstick skillet on medium heat 2 to 3 min.
- or just until crisp, stirring occasionally.
- Add onions and nuts; cook and stir 2 min.
- or until onions are softened.
- Place beans on platter; top with pancetta mixture and cheese.
- Drizzle with dressing.
