Jiggly Orange Wedges
- 2 navel oranges
- 1 1/4 cups strained fresh orange juice
- 1 1/2 teaspoons unflavored gelatin
- Cut the oranges in half lengthwise and remove all of the pulp.
- (It can be reserved for another use, if desired.)
- In a small saucepan combine 1/4 cup of the juice and the gelatin and let the mixture stand for 5 minutes.
- Cook the mixture over low heat, stirring constantly, for 3 to 4 minutes or until all the gelatin granules are completely dissolved.
- Whisk the gelatin mixture into the remaining orange juice.
- Pour the mixture into the hollowed shells and chill them, covered, for 4 hours or until the mixture is jelled.
- Cut each half into 3 wedges.
