Garlicky Mini Muffins Florentine

  1. Preheat oven to 375 degrees F.
  2. oil mini muffin tins.
  3. Sift flour, salt, soda, and baking powder together.
  4. Beat eggs with milk and add to flour mixture.
  5. Stir in oil and spinach and mix well.
  6. Fold in herbes, pesto, cheese and garlic.
  7. Spoon into muffin cups and bake for 12-15 minutes until nicely browned.
