Amaretto-Praline , (Zante)
- 100 grams walnuts
- 25 grams pistachio nuts
- 250 grams marzipan
- 15 grams quality honey
- 100 grams icing (confectioners) sugar
- 4 tbsp Amaretto( almond liquor )
- 300 grams dark best chocolate.for baking
- 30 pistachio kernels unsalted for decoration
- chop the wal and pistachio nuts very very fine.
- take the marzipan, honey, 60 grams of the icing sugar.the chopped nuts and the liquor and lnead into a dough
- divide this inti three equal parts and dust with rest of icingsugar.
- Roll into three 45 cm long sausages cut each into 20 equal small pices
- roll each on off these pieces into a ball then into oval and rest on a bakingpaper lined tray
- melt the chocolate and brush over one side of each oval
- let chocolate set .repeat until praline is evenly covered with chocolate
- make a piping bag out of bakingpaper or use?
- bought one with a very fine nozzle and pipe a swirl or spiral onto each praline .add half a pistachio .
- enjoy with friends or wrap as present
- this will make about 60 pralines
