Mexi-Chicken Roll Ups

  1. Flatten out the chicken breasts to about 1/4 thickness.
  2. Blend together the cream cheese, salsa, cilantro, cumin and garlic powder to form a sauce.
  3. Spread a spoonful of sauce across each breast.
  4. Top with spinach leaves and then cheese.
  5. Roll closed and cover in crushed tortilla chips.
  6. Bake at 350 degrees F covered for 30 to 35 minutes or until chicken is cooked through.
