Vickys Brown Oven Bread, Gluten, Dairy, Egg & Soy-Free
- 450 grams Vickys Gluten-Free Brown Bread Flour, see link below
- 1/4 tsp salt
- 2 tsp xanthan gum
- 2 tbsp caster sugar
- 2 tsp fast acting yeast
- 1 tsp apple cider vinegar
- 6 tbsp vegetable oil
- 350 ml + warm rice or nut milk
- Preheat your oven to gas 7 / 220C / 425F and grease & flour a 2lb loaf tin
- In a large bowl mix the flour, sugar, salt and yeast
- In a seperate bowl combine the milk and vinegar
- Add the liquid ingredients to the flour mix to form a sticky dough, add 350mls to begin with then add extra by tablespoon as needed
- Add the oil and mix in.
- The batter should be like a thick cake mix, stiff enough to hold its shape but drop slowly from a spoon
- Pour the mix into the loaf tin and smooth the surface over with the back of a wet spoon
- Let rise for 20 minutes only then put in the oven
- Bake for 45 - 60 minutes until the bread sounds hollow when tapped on the base
- Let cool completely on a wire rack before slicing
