Chicken Marsala
- 3 lbs chicken cutlets
- flour
- salt
- pepper
- 12 lb butter
- 1 lb mushroom
- 1 cup beef consomme
- 12 cup dry marsala wine
- Slice cutlets thinly.
- Season flour with salt & pepper.
- Dredge chicken in flour.
- lightly brown in butter on both sides.
- Remove chicken.
- Add fresh sliced mushrooms to butter and brown.
- Add additional butter if necessary.
- Stir in consomme & Marsala.
- Put chicken back in, cover, and simmer for 10 to 15 minute
- Serve over pasta!
