Mexican Wedding Cakes
- 1 cup powdered sugar
- 1 cup butter, softened
- 2 teaspoons vanilla
- 2 cups all-purpose flour
- 1 cup ground pecans
- 14 teaspoon salt
- Preheat oven to 325.
- Mix 1/2 cup powdered sugar (the other 1/2 cup is for later), vanilla, and butter in a large mixing bowl.
- Beat till mixed and fluffy.
- Add the salt, flour, and pecans to the mixture till it forms a dough.
- Shape into 1 inch balls and put on an ungreased cookie sheet about one inch from each other.
- Bake for about 15 to 20 minute They should not brown.
- But they will be set.
- Let them cool SLIGHTLY then roll them in the other 1/2 cup of powder sugar you put aside.
- Let them finish cooling then roll them one more time in the powder sugar.
- Your done!
