Chunky Tomato Salsa
- 1 1/2 c. seeded, finely chopped red and yellow tomatoes
- 3/4 c. cubed queso fresco
- 3 tbsp. finely chopped red onion
- 2 tbsp. capers
- 1 tbsp. extra-virgin olive oil
- 1 tsp. fresh thyme
- salt
- Freshly ground pepper
- In a medium bowl, gently toss all ingredients to combine.
- Serve salsa chilled or at room temperature with crackers or chips, or as an accompaniment to grilled swordfish or chicken.
