Chicken Meat Pie Recipe
- 1 c. minced onion
- 2 tbsp. butter
- 1/2 c. water
- 1 (14 1/2 ounce.) can chicken broth
- 1/2 of 10 ounce. pkg. mixed vegetables
- 3 potatoes, diced in sm. cubes (slightly cooked)
- 1/4 c. flour
- 1 teaspoon poultry seasoning
- 3/4 teaspoon salt
- 2 1/2 c. minced chicken
- Cook onion in 2 Tbsp.
- butter over medium high heat 3 min or possibly till tender.
- Add in combined water, broth, 1/4 c. flour, seasoning and salt.
- Cook 3 min or possibly till thickened.
- Stir in chicken, vegetables, potatoes.
- Prepare pastry (use favorite pie pastry, rolling thicker than dessert pie).
- Pour mix onto pie pastry.
- Cover with pastry on top.
- Make a slash in the top crust to allow steam to escape.
- Bake in preheated 350 degree oven for 40-60 min or possibly till pie is a light brown.
