Curried Potatoes, Peas and Bacon
- 5 small potatoes or 2 large ones
- 450 grams frozen peas
- 50 grams bacon
- 1 garlic clove
- 1 small onion (optional)
- 1 salt
- 1 black pepper
- 1 paprika
- 1 curry powder
- 1 rosemary
- 1 bunch fresh parsley
- 1 tsp dijon mustard (optional)
- 1 good quality olive oil
- Peel and chop onions, chop garlic finely.
- Put in a pot over medium high heat.
- Add bacon.
- After about a minute, add peeled and cubed potatoes, peas and enough water to almost submerge the vegetables and bacon.
- Cover the pot.
- Cook for 15-20 minutes or until potatoes are cooked, stirring occasionaly.
- Take off heat.
- Season with salt, pepper, paprika, curry powder, rosemary, dijon mustard and olive oil.
