Breakfast Fried Rice

  1. In a small bowl, using a fork or small whisk, whisk the egg whites until they bubble lightly.
  2. Place a small nonstick skillet over medium heat.
  3. When warm, lightly mist the pan with spray and pour the egg whites into the pan.
  4. Using a wooden spoon, scramble the whites, allowing the uncooked egg whites to run underneath the pieces that begin to cook, for 3 to 5 minutes, or until almost set.
  5. Stir in the rice, chili garlic sauce, and green onion.
  6. Continue stirring the mixture for another 1 to 2 minutes, or until the eggs are completely cooked and the ingredients are well combined.
  7. Season with salt and pepper and serve immediately.
