Scalloped French Fried Potatoes Recipe
- 1/2 c. butter
- 3/4 c. minced green peppers
- 3/4 c. minced celery
- 1/2 c. flour
- 1 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 4 c. lowfat milk
- 1/3 c. minced pimiento
- 3 Packages of 9 ounce. frzn french fries (thawed out)
- 3/4 c. shredded carrots
- 3/4 pound American cheese
- Heat butter, add in green pepper cook till tender.
- Add in flour, salt and pepper.
- Gradually add in lowfat milk, cook and stir till thick (20 to 25 min).
- Add in pimiento, carrots, potatoes and half of the cheese and pour into shallow glass (3 qt size) or possibly into 9 x 13.
- Bake 30 min, sprinkle with rest of cheese and bake till melted can be made the night before and kept in refrigerator.
- Serves 12.
