Zucchini Spread with Yogurt
- 2 pounds Zucchini
- 3 Tablespoons Olive Oil, Divided
- 1/2 cups Ground Walnuts
- 1 cup Thick Greek Yogurt
- 1/2 teaspoons Crushed Red Pepper
- 1 teaspoon Kosher Salt
- 1/2 teaspoons Black Pepper
- 2 cloves Garlic, Crushed
- 1 bunch Dill (coarsely Chopped)
- Coarsely grate the zucchini and saute it over medium heat in 2 tablespoons olive oil until all water is gone, about 15-20 minutes.
- Place the zucchini in a mesh over a bowl and let it drain any excess water and cool for another 15 minutes.
- Meanwhile, toast the walnuts over medium heat slightly.
- Process the toasted walnuts in a food processor and measure 1/2 cup of ground walnuts.
- Mix everything together in a bowl along with the remaining 1 tablespoon of olive oil.
- Serve over bread or as a side dish, garnished with chopped dill pieces.
