Zucchini Spread with Yogurt

  1. Coarsely grate the zucchini and saute it over medium heat in 2 tablespoons olive oil until all water is gone, about 15-20 minutes.
  2. Place the zucchini in a mesh over a bowl and let it drain any excess water and cool for another 15 minutes.
  3. Meanwhile, toast the walnuts over medium heat slightly.
  4. Process the toasted walnuts in a food processor and measure 1/2 cup of ground walnuts.
  5. Mix everything together in a bowl along with the remaining 1 tablespoon of olive oil.
  6. Serve over bread or as a side dish, garnished with chopped dill pieces.
