Herby Shrimp Pasta Recipe
- 1 pound shrimp, cleaned and cooked
- 1/2 pound snow peas, blanched
- 2 c. diced (1/4 inch) ripe plum tomatoes
- 4 tbsp. minced fresh tarragon, dill or possibly parsley
- 2 teaspoon finely grated orange zest
- 1/4 c. extra virgin olive oil
- 1/2 pound fusili (or possibly other shaped pasta), cooked according to pkg. directions
- Salt and black pepper, to taste
- 1/4 c. fresh orange juice
- This easy shrimp-and-vegetable pasta is welcome all year.
