Cheese Puffs
- 1 cup Water
- 1/2 cups Butter
- 1/4 teaspoons Salt
- 1 cup Flour
- 4 whole Eggs
- 13 cups Shredded Swiss Cheese
- 1/2 teaspoons Dill
- Combine water, butter and salt in a medium saucepan and bring to a boil.
- Add flour to the pan and stir rapidly.
- Continue cooking and stirring until mixture forms a ball.
- Remove from heat and let cool for 10-15 minutes.
- Add each egg individually, stirring to combine thoroughly before adding the next egg.
- Mix in the cheese and herb.
- Preheat oven to 400 degrees F and grease cookie sheets.
- Drop tablespoons of dough onto greased cookie sheets, or transfer dough to a pastry bag and pipe mounds onto sheets.
- Bake puffs in a 400-degree oven for 35 minutes, or until the tops are golden.
- Gently press a few puffs with your fingers to check that puffs no longer have raw dough and are dry to the touch.
- Remove cookie sheets from the oven, transfer puffs to wire racks to cool, and serve warm.
