Chicken Skewers with Chilli, Lime and Coriander Mayonnaise
- 1 tablespoon peanut oil
- 2 cloves garlic, crushed
- 2 red chillies, finely chopped
- salt and pepper, to taste
- 12 (500g) chicken tenderloins, threaded on individual skewers Whole Foods 1 lb For $3.99 thru 02/09
- 1/3 cup KRAFT Creamy Egg Mayonnaise
- 1-2 tablespoons sweet chilli sauce
- 1/4 cup coriander leaves, roughly chopped
- 1 tablespoon grated lime rind Safeway 3 ct For $1.00 thru 02/09
- 1 teaspoon lime juice Safeway 3 ct For $1.00 thru 02/09
- lettuce leaves, vermicelli, carrot julienne and herbs (Thai basil or Vietnamese mint) to serve
- Combine the oil, garlic, chilli and seasonings in a bowl.
- Toss through the chicken tenders to coat, then thread onto individual skewers.
- Cover and refrigerate for 30 minutes.
- Combine the mayonnaise, chilli sauce, coriander, rind and juice in a bowl.
- Heat a grill pan or frying pan over a medium heat.
- Cook the skewers until golden and cooked through.
- Serve chicken skewers with mayonnaise and some lettuce, vermicelli, carrot and herbs on the side.
