Chicken Skewers with Chilli, Lime and Coriander Mayonnaise

  1. Combine the oil, garlic, chilli and seasonings in a bowl.
  2. Toss through the chicken tenders to coat, then thread onto individual skewers.
  3. Cover and refrigerate for 30 minutes.
  4. Combine the mayonnaise, chilli sauce, coriander, rind and juice in a bowl.
  5. Heat a grill pan or frying pan over a medium heat.
  6. Cook the skewers until golden and cooked through.
  7. Serve chicken skewers with mayonnaise and some lettuce, vermicelli, carrot and herbs on the side.
